His Mass is Weds Feb 23rd at 11 am with a celebration of his life at the church hall to follow. A Loving Tribute from Scotts wife Christine Gregory Scott Knight: May 19, 1966 - February 13, 2011 Scott, age 44, of Cibolo, TX. passed away suddenly February 13, 2011. He is survived by his adoring wife Christine and son Andrew Scott Knight, parents Logan and Clara Knight, of Reno NV, parents-in-law J. Douglas and Margaret G. Monroe, of Schertz, TX sister Lori Wilson and family of Reno, NV, sister-in-law Jennifer Monroe, and family of Forli, Italy, brother-in-law, James Monroe and family of Madison, WI, and extensive family and dear friends throughout the US and Texas. He was born and raised in the Farmers Branch area of Dallas, TX. His loving parents and sister and faithful friends and family of Chapel Hill United Methodist Church gave Scott a wonderful upbringing. Scott and his Dad enjoyed dune buggying together. Scott and his best friend Mike Young considered themselves brothers growing up together. Scott considered Mikes parents: Carl and Margaret Young his second parents . He made lasting friends. He was a cherished boy who his mother still refers to as precious . Scott was precious. Scott attended Chapel Hill Preschool, Farmers Branch Elementary, and Marsh Jr. H.S. Scott graduated from W. T. White H.S., in Dallas in 1983, where he played trombone solos on the field with the W.T. White Marching Band. Scott graduated from Texas Tech University in Lubbock, TX in 1989, where he was an active member of Sigma Nu fraternity. He excelled in the Texas Tech University Marching Band, playing trombone solos on the field and at the Cotton Bowl. Scott is my best friend. Scott and I met the year before I graduated from Tech. He had already graduated and was establishing his successful career managing Luby's Cafeterias. We were a match made in heaven and we married Jan 8th 1994. We shared an amazing and very strong marriage for more than 17 years. He was an awesome businessman. So awesome that he won the first "Lubys Manager of the Year" award in 1999. He was very driven and successful and amazing. His career took him to several Texas and New Mexico locations: San Antonio, El Paso, Santa Fe, Lubbock, New Braunfels, Tyler and Del Rio. We always had each other throughout the moves and found family and lasting friendships in Del Rio. When our Gift from God, our baby son Andrew was born Feb 8th, 2000, Scott was done with the corporate world of 80 hour work weeks. He wanted to actively parent our Andrew, not just kiss the sleeping baby before and after work. Scott and I bought our Fastsigns graphics franchise in 2003 in San Antonio. We chose San Antonio to be close to my parents. Our parents have been and continue to be our rock foundation of love, and support. Scott and I both knew family was important and felt so privileged to raise our son knowing all four of his grandparents, and extensive family. We ran our business together; Scott took the supporting role in our business to take the primary role in raising Andrew: taking him to school and being home to help Andrew with his homework. Scott LIVED life. He took big strides, and big bites. Scott was a proud Texan. He loved driving his truck throughout our surrounding area just to see Texas. When he was healthier he loved to take Andrew off road wheeling with his Jeeping friends. When his health prevented him from Jeeping, we found the same camaraderie in competition chili cooking and getting together with friends while working on his hobby skill. The Big Kahuna placed 12th in the Tolbert International Chili Championship his very first year competing. He was the quintessential foodie . He loved the chemistry of cooking. He was a proud American who loved politics. He was always up to date on what senator, or representative was voting on what bill and how that related to the rest of the world. He enjoyed family and friends and always found at least one good thing in every person he met. Talented and accomplished, Scott was also perfectly content being the foundation helping his loved ones shine. I have admired Scott since the day I met him. I have loved him from that day as well. Scott was as strong as an ox, but in 2008 he was hospitalized for two weeks with congestive heart failure. He did get a little better, but the last three years has been a bumpy ride. He had had an endocrinologist appointment on Wednesday Feb 9th, 2011. His thyroid was in check, his numbers were good. He just started seeing a new internist and we were hopeful that we were on the right track to getting Scott better. He had prepared a perfect little cheese and fruit tray for us on Thursday Feb 10th, 2011. He had said: This is our Valentines Day . Scott, Andrew and I competed in the Lockhart chili cook-off on Saturday Feb 12th, 2011. Scott placed 2nd and Andrew placed 1st in Jr. Chili. Scott was so pleased and I was so proud of my boys. On Sunday, Feb 13th, 2011 Andrew and I had gone out to the rodeo grounds all day. We came home to find my beloved Scott, Andrews adoring Dad, collapsed and was already gone. Andrew tells me Daddy is not gone. He is in our hearts so he is not gone: From the mouths of babes . . . Please help me honor my best friend and wonderful husband and Andrews loving father, and Logan, Clara, Doug and Maggis devoted son, G. Scott Knight.
